There are flavors that linger long after the moment has passed — and for me, one of those came from a quiet corner of the Passau Christmas market. I was wandering between stalls, the scent of roasted nuts and mulled wine in the air, when I came across something unexpected: flame-grilled Salmon, served on a cedar plank, with a dollop of Creamy Honey Mustard on the side.

Back in my kitchen, I set out to recreate it — not just the flavor, but the feeling. The warmth of the market, the glow of the lights, the quiet joy of discovering something simple and delicious.
🎄 Creamy Honey Mustard (German Christmas Market Style)
This version is very close to what I tasted in Passau: smooth, balanced, and gently festive.
Ingredients
- 3 tbsp Dijon mustard (for gentle tang)
- 2 tbsp mild German-style sweet mustard (like Händlmaier or Löwensenf medium)
- 2 tbsp honey (preferably floral or acacia honey for subtle sweetness)
- 3 tbsp mayonnaise (for creaminess)
- 2 tbsp sour cream or crème fraîche (adds tart balance)
- 1 tsp apple cider vinegar (optional, for brightness)
- Pinch of salt
Instructions
In a small bowl, mix the mustard’s together until smooth. Whisk in the honey, then fold in the mayonnaise and sour cream to create a creamy, velvety texture. Add a splash of vinegar if you like a little extra brightness. Taste and adjust — more honey for sweetness, more Dijon for tang. Chill for 30 minutes before serving to let the flavors meld.

With flame-grilled salmon, or other grilled seafood, chicken and meats that’ll pairs beautifully with the honey mustard. You can incorporate it in a salad dressing, thinned with a splash of milk or cream. Make a dip for roasted vegetables, pretzels, or even crispy potato wedges.
This special honey mustard sauce has become a winter favorite in my kitchen — a reminder of that festive evening in Passau, and how the simplest things can bring the most joy.
🎄 A Cultural Note: Passau’s Christkindlmarkt
Nestled at the confluence of the Danube, Inn, and Ilz rivers, Passau is known as the “City of Three Rivers” — and during Advent, it transforms into a winter fairytale. The Passauer Christkindlmarkt, held annually in the Domplatz (Cathedral Square), is one of Bavaria’s most atmospheric Christmas markets. With the Baroque towers of St. Stephen’s Cathedral rising above, the market glows with festive lights, music, and the scent of roasted almonds, gingerbread, and mulled wine.

The market dates back to 1924, and today features around 60 carefully curated stalls, offering handcrafted gifts, regional delicacies, and traditional treats like Sengzelten (a Bavarian flatbread), flame-grilled salmon, and of course, warming sauces like the creamy honey mustard you discovered.
Walking through the alleys of Passau’s Old Town, with snow crunching underfoot and the cathedral bells ringing in the distance, it’s easy to see why this market holds such charm. It’s not just about shopping — it’s about savoring, connecting, and celebrating the season in one of Germany’s most picturesque settings.

Inspired by a festive stroll and a flame-grilled salmon, it was the sauce that caught me — smooth, mellow, with just the right balance of tang and sweetness.

Not too sharp, not too sugary. Just perfect. I asked the vendor about it, and he smiled: “Hausgemacht,” he said. Homemade. That was all I needed to hear.
