Using ingredients like broccoli, zucchini or squash, cheese, ham and eggs make a great low carb meal. If you not concerned about carbs, bake it with a pie crust or toasted bread on the bottom. Beware, it might get soaked with the moisture, so pre-bake the pie crust first.
Broccoli-Cheese Breakfast Casserole
Ingredients
- 4 cups broccoli florets (optional add some Zucchini, Squash)
- 5 whole large eggs
- 3 slices of ham, cubed
- 5 green onions, sliced
- 1/4 cup whole cream (or milk)
- 1 tsp cornstarch
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp olive oil
- salt and fresh pepper
- olive oil spray

If you don’t mind carbs, pie crust or toasted bread can be placed on the bottom. I found, it has a tendency to soak through, so you might want to pre-bake the pie crust first.

Instructions
- Preheat oven to 350 F.
- Steam the broccoli (and/or zucchini, squash) with a little water for about 3 to 5 minutes in the microwave.
- When broccoli is cooked, crumble into smaller pieces and add olive oil, salt and pepper.
- Add green onions and ham or fried bacon (optional).
- Mix well.
- Spray a standard size non-stick low casserole dish or pie baking pan with oil.
- Spoon broccoli mixture evenly into baking dish.
- In a medium bowl, beat eggs, whole cream, cornstarch and grated cheese, salt and pepper.
- Pour into the greased baking pan over broccoli mixture until a little more than 3/4 full.
- Top with grated cheddar and bake in the oven at 350 F until cooked, about 20 to 25 minutes.
- Serve immediately.
Notes
Wrap any leftovers in plastic wrap and store in the refrigerator to enjoy during the week
