And if guests show up unexpectedly? No stress at all. The dough uses only pantry staples I always have on hand: sugar, flour, and butter. That’s all you need for the perfect streusel dough. Since you only prepare one dough for both the crust and the topping, you save time and dishes. Also see optional cake batter base in Notes.

You’ll need a 9‑inch or 10‑inch Springform pan.

If you want to bake a full sheet pan, simply use 2.5 times the amount of each ingredient.

  • ⅔ cup cold butter (10.5 tbsp)
  • ¾ cup sugar
  • 2 cups all‑purpose flour

Note: The streusel ratio is 2 : 2 : 4 (butter : sugar : flour).

One “unit” equals 2.6 oz (75 g). Adjust the streusel amount easily by increasing or decreasing the units.

  • 1½ lbs tart apples (4 apples, such as Braeburn, Honeycrisp, or Granny Smith)
  • 4 tablespoons sugar
  • 1 packet vanilla sugar (or 1 tablespoon vanilla sugar)
  • Juice of ½ lemon
  • ½ teaspoon cinnamon

1. Prepare the Pan

Preheat your oven to 350°F (top/bottom heat).

Line the bottom of your springform pan with parchment paper and lightly butter the sides.

2. Make the Streusel Dough

Using a stand mixer or hand mixer with dough hooks, combine the flour, cold butter, and sugar until the mixture becomes crumbly and sandy.

Tip: For the best streusel, use high‑quality butter. Avoid margarine or “soft spread” butter.

Once mixed, quickly knead the mixture with your hands to form coarse crumbles. Place the bowl in the refrigerator while you prepare the apples.

3. Prepare the Apple Filling

Peel the apples, quarter them, remove the cores, and slice them into thin wedges.

Add the sugar, vanilla sugar, lemon juice, and cinnamon. Toss everything together until the apples are evenly coated.

4. Form the Base

Remove the streusel from the fridge.

Press two‑thirds of the streusel firmly into the bottom of your springform pan using a spoon.

Important: The base should be compact and without gaps so it doesn’t become soggy.

Optional: You can press a small 1–1.2 inch (2–3 cm) rim up the sides. The base will be slightly thinner, but it looks beautiful.

5. Add the Apples and Topping

Spread the apple slices “loosely and naturally” over the base — no need to arrange them perfectly.

Sprinkle the remaining streusel (about one‑third) evenly over the apples.

Bake on the middle rack for 45 minutes, until the streusel is golden and the apples are tender.

Serving

This Apple Streusel cake is wonderful when served warm.

Add a scoop of vanilla ice cream or a dollop of whipped cream for an extra cozy touch.

Notes:

If you prefer the base of the cake made of a batter: Combine 1/14 cup plain flour, 2 tsp baking powder, 1/3 cup cornstarch, pinch of salt. With a handheld or stand mixer equipped with a paddle attachment, cream together 1/2 cup of butter and 1/2 cup of sugar on high speed until the mixture is smooth and creamy, which should take about 2 minutes. Incorporate 3 eggs and blend well for an additional minute. Add in 1 teaspoon of lemon zest. Gradually mix the flour mixture into the batter at low speed until all ingredients are combined.
