
I had planned to make some Zucchini Fritters. I often visit the farmers market in my area, where all the vibrant produce looks so enticing that I often find myself buying more vegetables than I truly need. The Zucchini and vegetable variety available is simply irresistible!
These delicious zucchini fritters can be prepared either in a Skillet or an Air Fryer.
Skillet Option:
Begin by adding vegetable oil to the pan and heating it over medium heat. Once hot, drop in the Zucchini mixture using a large spoon and gently flatten each fritter. Fry for about 2 to 3 minutes until they are lightly golden brown on one side before flipping them over.
2 Air Fryer Option
Recently, I’ve been steering clear of fried foods and instead using my Air Fryer to whip up some delicious and healthier recipes. To start, simply spray each side of the fritters with a light coating of avocado oil for added flavor and crispiness that will make them truly irresistible.Place Zucchini patties in Air Fryer at 350 F for 10 min , flip over and air fry another 10 to 15 min.



Zucchini Fritters
Ingredients
- 2 Zucchini (or squash)
- 2 tbsp grated Parmesan
- 1 egg
- 1/2 cup flour
- 4 green onions, sliced
- 3 cloves garlic, minced
- 1 tsp sea salt
- 1 tsp pepper
- 1/2 cup Vegetable oil for frying
Instructions
- Trim, peel and grate Zucchini.
- Place grated zucchinis in large coriander (with cheese cloth) into the the sink.
- Mix and toss with 1 tsp of Kosher salt. Wait 10 min.
- Squeeze out excess water from the zucchini with the cheesecloth, then place in medium bowl.
- In small bowl place egg, flour, green onions, garlic and a dash of pepper.
- Add the contents of the small bowl to the shredded Zucchini until well combined.
- Heat vegetable oil in deep pan on high.
- Place patties, about 3, with a large spoon into the pan, flatten with spoon.
- Fry each side 2 to 3 min. until browned.
Notes
Taste best fresh, but can also be frozen and warmed up in toaster oven later.
Serve with sour ceam or Tzatziki
