To make traditional Greek Bifteki, start by placing one pound of hamburger meat into a large mixing bowl. Drain the goat cheese and set it aside for later. Add the cubed onion, egg, and breadcrumbs to the meat, then mix everything together thoroughly. Season the mixture with salt, pepper, and oregano, and press the garlic cloves through a garlic press before folding them into the meat. Once the mixture is well combined, shape it into patties.

Cut the drained goat cheese into small cubes. Flatten each meat patty, place a few cubes of cheese in the center, and fold the edges of the meat over the filling. Shape each portion into an oval Bifteki steak, making sure the cheese is fully enclosed so it melts beautifully inside during cooking.

Heat the olive oil in a pan over medium‑high heat and sauté the Bifteki briefly on both sides until lightly browned. Reduce the heat to medium and continue frying the patties for eight to ten minutes, turning occasionally, until they are cooked through and juicy.
