
There are certain smells that instantly transport you back across an ocean and decades of time. For me, whenever the rich, savory aroma of slow-roasted pork, dark beer, and caraway fills the kitchen, I am right back home when eating a crispy Schweinshaxr or Pork Knuckle in Bavaria.
Growing up, Sunday dinner wasn’t just a meal—it was an event. Every other Sunday, and without fail on every major holiday, the house would come alive with the unmistakable preparation of Schweinshaxe (traditional crispy roasted pork knuckle). Long before the sun had fully climbed into the sky, the kitchen would begin its transformation. My family treated the hunk of meat with reverence. It had to be tender enough to fall off the bone, yet crowned with a crackling skin so shatteringly crisp you could hear it across the dining room.

While traditional Bavarian kitchens usually rely on a roaring oven, today I’m sharing how you can bring this cherished piece of my childhood to your table—using either your Conventional Oven or an Air Fryer to achieve that legendary crunch. Welcome to my kitchen table; let’s make some magic.
Authentic Bavarian Schweinshaxe (Crispy Pork Knuckle)
This recipe yields a tender, melt-in-your-mouth pork knuckle with an irresistibly crispy crackling.
Ingredients
- 1 pork knuckle (approx. 2.2 lbs / 1 kg)
- 1 bottle (approx. 11.2 to 12 oz / 330–500 ml) dark beer
- 2 tablespoons tomato paste
- 1/2 bulb of garlic
- 1.3 lbs (600 g) soup vegetables (leek, celeriac/celery root, carrot, onion)
- Bay leaves
- 8 juniper berries
- 1 tablespoon whole caraway seeds
- 1 tablespoon mustard
- Salt and pepper
- 4 cups (1 liter) vegetable broth
- Cornstarch (for thickening gravy)
Step-by-Step Instructions
Step 1: Preparation
Wash the soup vegetables and the garlic bulb, and chop them roughly (do not peel). Add the bay leaves, caraway seeds, juniper berries, and tomato paste to the vegetables and mix well. Place the vegetable mixture into your air fryer basket (or a roasting pan if using an oven), and place a roasting rack on top of the vegetables.
Step 2: Slow Cooking (Braising)
Score the skin of the pork knuckle in a diamond pattern using a very sharp knife, and season generously with salt. Place the knuckle on the rack, pour 1/3 of the beer over it, and cover loosely with a piece of aluminum foil.
- Air Fryer Setting: Set to Bake at 280°F (140°C) for 60 minutes.
- Repeat this process 3 times total: Pour another 1/3 of the beer over it each time, covering and baking for 60 minutes at 280°F (140°C) per cycle (3 hours total cooking time).
- Note for Oven Users: If baking in a conventional oven, use the same temperature and time. Ensure the knuckle does not touch the top heating element; lay it on its side if necessary.
Step 3: Making the Gravy
Strain the cooking juices and pan drippings from the air fryer/pan into a small saucepan. Add the vegetable broth and bring to a boil. Season with mustard, salt, and pepper to taste, and thicken with a little cornstarch dissolved in cold water.
Step 4: Crisping the Crackling
Remove the vegetables and place the pork knuckle back into the air fryer or oven without the vegetables. Set to Air Fry (or high heat convection in your oven) at 375°F (190°C) for 20 to 30 minutes until the crackling is ultra-crispy. Tip: Start with 20 minutes and check frequently so the crust doesn’t burn.
Step 5: Serving
Serve hot accompanied by the homemade rich gravy, traditional coleslaw (Krautsalat), and fluffy Potato Dumplings (Kartoffelknödel) or Semmelknödel.
